- 3 butternut vegetables cut in half
- 50ml olive oil
- 3 garlic cloves, chopped
- 500g minced beef
- 1 can of ALL GOLD tomato and onion mix
- 60g parmesan cheese
- Salt & pepper to taste
Cut the butternut in half, remove pips, and hollow out a line to the top of the butternut. Rub olive oil over the flesh. Sprinkle garlic over the butternut. Wrap up each half butternut with tin foil and roast in the oven at 180°c until just cooked. In a pot, brown the mince and add the ALL GOLD tomato and onion mix and simmer for 30 minutes. Spoon the mince into the butternut, sprinkle with parmesan cheese and place back into the oven, under the grill, to brown.
