- 4 avocados, cubed
- 200ml ALL GOLD 1000 island sauce
- 500g fresh salmon, chopped
- 1 lemon, juiced
- 2 cans (410g) of ALL GOLD chopped peeled tomatoes
- 100g mixed baby leaves
- Salt & pepper to taste
Cut up the avocado and place into a bowl and pour over the ALL GOLD 1000 island sauce. In a pot, add the ALL GOLD chopped peeled tomatoes and reduce until a thick, juicy tomato paste is formed. Allow to cool. Slice the salmon and dress with the lemon juice. Add seasoning at the last minute. Using a tian mould, line the base with the avocado mixture, top with the salmon and finally top with the cool, rich tomato reduction. Smooth off the top and remove the tian mould.
